BROCCOLI STUFFED CHICKEN BREAST

   
                                         

  

1 sm. box frozen broccoli, drained
1 onion, chopped
2 cloves garlic, minced
1/4 tsp. ea. onion and garlic powder
salt and pepper, to taste
1/2 c. grated Parmesan or provolone cheese
2 tbsp. butter, melted
1 tsp. extra virgin olive oil
8 boneless chicken breast halves

 

Cook broccoli with onions and garlic until tender in 1 tsp. extra virgin olive oil. Coarsely mash when done and add cheese. Stir until cheese has melted in broccoli. Beat chicken breast until think.

Arrange a row of broccoli on chicken breast and roll breast around broccoli.

Place in 350°F oven for  half an hour.
